Sweet Potato Boats

Happy Valentine’s Day Beautiful Friends! ♥ I don’t have a sweets recipe for you today, but I do have a “Sweet” Potato Boats meal for you! See what I did there? 😉

This heart-healthy, quick & incredibly simple recipe can be made morning, noon, or night! The best part about this meal is that it can be tailored to fit your specific taste buds.

For our boats, we decided to lean a bit more into a breakfast theme, by including an egg. But again, you do you & customize to your liking.

Ingredients
  

  • 2 large sweet potatoes
  • salt (to taste)
  • black pepper (to taste)

Fillings & toppings

  • 4 large eggs
  • spinach (chopped)
  • tomato (diced)
  • ham (diced)
  • shredded part-skim mozzarella cheese

Instructions
 

  • Use a fork to pierce holes all over the sweet potatoes.
  • Preheat oven to 400°F.
  • Microwave potatoes for 7 mins until they have softened significantly. *Be careful – sweet potatoes will be hot!
  • Slice the potatoes in half & use a spoon to scrape out the inner flesh, making sure to leave at least a ¼-inch thick border on each side, saving the scooped out portion to use for side dishes.
  • Transfer the potatoes to a parchment paper-lined baking sheet.
  • Fill each potato with 1 egg & an assortment of fillings for whatever flavor combinations you’d like. Season each potato with salt & pepper to taste. *I tend to omit salt for a healthier version.
  • Bake for 10-15 mins, until the egg has cooked to preferred doneness.
  • Top the potatoes & side dishes with your choice of topping & garnishes. *We added some chopped spinach to our scooped out portion for a mini side.
  • Serve & Enjoy!
