Roasted Chicken & Chickpea Pita Wraps

This easy Mediterranean inspired meal comes together in just 30 minutes. Warm pita bread spread generously with tzatziki sauce topped with shredded chicken, crispy chickpeas, & fresh arugula makes for a quick, healthy weeknight meal.

If you’re craving Mediterranean flavors & short on time; this recipe will surely fit the bill.

What is tzatziki sauce? Tzatziki is made simply with yogurt, drained cucumber, olive oil, fresh herbs (usually mint or dill), garlic, lemon juice, & salt. Typically used as a refreshing chilled sauce, dip or spread. Since we wanted to save time, we purchased store-bought tzatziki.

If you enjoy your pita bread toasted, I’ve got you covered. After you’ve roasted your chicken & chickpeas, turn the oven off placing the pita bread in the oven for a few minutes. The residual heat will warm your pita up nicely for a deliciously warm chicken wrap. Feel free to skip this step if you’re in a rush or have fresh pitas to use.

Substitutes or Additions for this Recipe:

  • Feel free to substitute any variety of flatbread for pitas.
  • This recipe is perfect for leftover chicken or you can even grab a rotisserie chicken from the store.
  • If you’re not a fan of arugula, simply swap out for any green of your choosing: spinach, watercress, kale, lettuce, spring mix, etc.
  • Add more veggies if your heart desired; sliced tomatoes, red onions, avocado, cucumber, zucchini, & the list goes on!
  • If preferred, cut your chicken breasts into thin strips, cubes, or diced.
  • A great sauce alternative we tried out was incorporating light ranch dressing. Not “Mediterranean” per se, but a wonderful substitute if you run out of tzatziki as we did! 😉
  • Want to make this recipe vegan? Simply omit the chicken & add additional chickpeas.

Chickpeas aka garbanzo beans have an impressive nutrition profile, packing many powerful health benefits. These little guys are high in vitamins, minerals, fiber, & protein; which help to manage weight, improve satiety, control blood sugars, & may reduce your risk of developing chronic diseases.

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 (15.5) oz. can chickpeas (drained)
  • 2 tbsp olive oil
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • ½ teaspoon black pepper
  • 4 whole-wheat pita breads
  • ¾ cup tzatziki sauce
  • 1 cup fresh arugula or greens of choice (rinsed & drained)
  • Handful of fresh dill chopped (optional)

Instructions

  • Preheat the oven to 425 degrees. Line two baking sheets with parchment paper. (Or one sheet, if big enough)
  • Pat-dry chicken & chickpeas with paper towels. Transfer the chicken & chickpeas onto baking sheets in one single layer.
  • In a small bowl, mix olive oil, coriander, cumin, & pepper.
  • With a basting brush, brush both sides of chicken & chickpeas with spice mixture. If you don’t have a basting brush, drizzle on & spread evenly with a spatula or clean hands.
  • Roast for 15 minutes or until the chicken is fully cooked (should read between 160-165 F degrees when a thermometer is inserted in the middle of the breast).
  • Let cool for 10 minutes. Cut chicken into strips or shred depending on preference.
  • When ready to assemble, lightly toast pita bread & place it on a plate. Spread with a few tablespoons of tzatziki sauce; topping it off with chicken, a handful of roasted chickpeas, & arugula. Need more sauce? Simply drizzle your pita with more tzatziki. If desired, garnish with fresh dill & pepper.
  • Serve & enjoy!
