Ingredients
- 1 1/2 cups almond flour
- 1 tsp baking powder
- 1 egg
- 1/4 cup raw honey
- 1 1/2 tbsp coconut sugar
- 1/4 cup avocado oil (can substitute melted coconut oil)
- 1/2 tsp vanilla extract
- 1/2 cup oats
- additional honey to drizzle on (optional)
Instructions
- Combine egg, honey, coconut sugar, oil & vanilla – mix well.
- Add almond flour & baking powder – mix together well.
- Carefully stir in the oats & place in fridge for 15-20 minutes (Use this time for clean up!)
- Take out of fridge & form into balls w/ avocado oil lathered hands or spray palms w/ a little bit of non-stick cooking spray. Press down with palm.
- Bake at 350 for 10-15 minutes, depending on how chewy or firm you’d like your cookies.
