Cheesy Turkey Taco & Cauliflower Rice Skillet

This simple Turkey Taco & Cauliflower Rice Skillet is bursting with delicious flavors & topped with a creamy layer of cheesy goodness. A wonderfully healthy & affordable weeknight meal that comes together in under 30 minutes.

If you’re searching for a quick budget friendly meal the whole family will adore; this recipe is definitely a go! My readers know that I’m a huge fan of one pot meals, as they’re incredibly easy to prepare & minimal clean up required. Win-win! Plus it’s packed with wholesome veggies to make for a satisfying & well balanced meal. 

I know a lot of individuals are weary of Mexican recipes as many entrees can be loaded with salt, fats, & other calorie-laden ingredients. And while I’m a huge proponent of “all things in moderation”; I also love finding healthier alternatives we can incorporate into our weekly meal rotation. 

For this taco inspired recipe, we’ve substituted white rice for cauliflower rice; providing us with an abundance of fiber & nourishing vitamins. Making this change helps to lighten up the meal without us feeling weighed down after consuming. Instead of ground beef we’ve swapped in lean ground turkey to lower the saturated fat content & focus on a more heart healthy option.

Other nutritious & filling ingredients include our canned fire roasted tomatoes, black beans, frozen corn & rice cauliflower. Best part is – you don’t even need to defrost the veggies; we just toss them into the skillet & let them simmer away! We’ll also skip the high sodium taco seasoning packets & add in aromatic Mexican spices like chili powder & cumin. These flavorful additions help aid in digestion, build immunity, & contain anti-inflammatory properties.

We garnished our dish with yummy avocado slices, cilantro, & a dollop of light sour cream. You could use Greek yogurt here as well. 

What can I do with my leftovers? 

  • Fill non-fried corn taco shells for your next Taco Tuesday meal 
  • Make quesadillas by layering turkey mixture & cheese between soft tortillas, then toasting them in a skillet
  • Use your leftovers as a dip to scoop up with tasty baked tortilla chips
  • Pile your leftovers onto baked tortilla chips with salsa & a sprinkle with cheese. Bake in the oven for a healthy nacho spin.
  • Make a wrap with pita or flatbread
  • Create a delicious taco salad, by serving over a bed of greens & your other favorite ingredients like tomatoes, salsa, tortilla strips, mushrooms, bell peppers, & the list goes on.

Ingredients
  

  • 2 tsp olive oil
  • 1 medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1 pound lean ground turkey
  • pepper
  • ¼ cup tomato paste
  • 1 can (14.5 oz diced fire roasted tomatoes)
  • ¼ cup water
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1 package (10 oz frozen riced cauliflower)
  • 1 cup frozen corn
  • 1 can (15.5 oz black beans) (drained and rinsed)
  • 4 oz reduced fat cheddar cheese (grated)
  • Optional toppings: (sliced avocado cilantro, sour cream or Greek yogurt)

Instructions
 

  • Heat the oil in a large skillet over medium high heat. Add the onions & sauté a few minutes until they start to soften. Add the garlic & cook another minute until fragrant. Add the ground turkey & season it with pepper. Cook the turkey until browned, breaking it up with a spatula as it cooks.
  • Add the tomato paste & mix it into the turkey. Cook 1-2 minutes and then add the fire roasted tomatoes, water, chili powder, cumin, & ¼ tsp pepper. Stir to combine.
  • Stir in the frozen riced cauliflower & corn (no need to defrost). Cook for 6-7 minutes until the vegetables are cooked. Stir in the black beans & about half of the grated cheese. Simmer for another minute until the cheese is melted.
  • Sprinkle the remaining half of the cheese evenly over the skillet and cover with a lid for a minute until melted. Uncover & garnish with avocado slices & cilantro. Serve with sour cream or Greek yogurt, if desired & enjoy!
