I’m a sucker for breakfast foods, I could quite literally eat breakfast morning, noon & night! These delightfully healthy pancakes are the perfect weekend treat you can create in just 15 mins – which in turn won’t cramp your relaxed weekend morning vibes!
When I made these, I admittedly made my pancakes too big (because ummm, why not?!) Well, turns out it’ll make the pancakes a bit more difficult to cook all the way through. So, the second time around, I filled my ½ cup only about 2/3 full, making it much quicker & easier to cook.
If you’re looking for a fun healthy spin to traditional pancakes, these are definitely worth a try! Super simple to make with minimal ingredients & guaranteed to be adored by the entire family.
Healthy Additions:
Any fruit desired, blackberries, strawberries, apples, clementines, pear, pineapples, peaches, etc.
Try a dollop of vanilla greek yogurt
Drizzle on honey or pure maple syrup (avoid slathering as this would defeat the healthy vibe! 😉 )
Sprinkle on healthy chopped nuts or seeds; walnuts, hazelnuts, almonds, pecans, macadamia nuts, sunflower seeds
Top with drizzled nut butter
Sugar-free or low sugar jam/jelly
Blueberry Banana Pancakes
Whip up these blueberry banana pancakes with only 5 ingredients & fill your body with scrumptious goodness!
Mash bananas in a large bowl until it resembles a thick puree. Combine eggs & vanilla, then mix in oats. Fold the blueberries in carefully.
Prep your skillet with a non-stick cooking spray. Heat a skillet to medium heat & add in a scoop of the pancake batter. (*Mine got a little too big, I’d suggest filling your ½ measuring cup about 2/3 full). Smooth out to form an even layer. Cook for about 2-3 minutes until you start to see bubbles releasing from the top of the batter.
Flip & cook until the other side is golden brown, only taking a few mins.
Add your favorite toppings to these bouncy pancakes! (I drizzled on a little bit of syrup & added a dollop of Greek yogurt. Talk about divine!)
