Apple Cinnamon Oatmeal

In need of a healthy breakfast or snack alternative to maybe one of those holiday cookies we all consumed over the past couple of weeks? Ain’t no shame – I’m right there with ya! 😉

This simple & quick apple cinnamon oatmeal bowl is not only delicious it will keep you feeling full & energized throughout your entire morning! Filled with crisp apple slices, a sprinkle of cinnamon, nutritious nuts, creamy almond butter all over a bed of hearty oats.

Oatmeal bowls have been one of my favorites for the longest time. While on tour, I remember back in my performance days that I’d repurpose the hotel coffee pot as a heating mechanism to create hot water to pour over my oatmeal packets for a tasty treat to take on the road with me. Talk about living the tour life! Haha! (*Be careful with prepackaged oatmeal – it might be loaded with unwanted added sugars.)

One of the great things about oatmeal bowls is the abundance of topping options you can add to give your nutritious oatmeal added texture & personalized flavor.

Healthy topping ideas for your oatmeal bowl:

  • Seasonal fruits (Strawberries, Blueberries, Bananas, Raspberries, Apples)
  • Nuts (Walnuts, Almonds, Pecans)
  • Seeds (Hemp, Chia, Flax)
  • Nut Butter (Or low sugar PB)
  • Sprinkle of dried fruit (Apricots, Raisins, Cranberries, Cherries, Coconut)
  • Splash of honey, agave nectar, maple syrup
  • A dusting of cinnamon, nutmeg, pumpkin pie spice

In a rush? For busier mornings you can always prep this oatmeal the night before. Cook as directed then store in a sealed glass container in the refrigerator. Reheat either on a stovetop or in a microwave with a splash of almond milk or water. Add toppings after re-heated.

Ingredients
  

Oatmeal

  • 1/2 cup old-fashioned rolled oats
  • 1 cup water
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract
  • pinch of salt (optional)

Toppings

  • 1 tbsp almond butter (or peanut butter)
  • 1 tbsp walnuts
  • 1/2 apple (diced small)
  • 1 tbsp maple syrup
  • pinch of cinnamon

Instructions
 

  • Stove top: Bring 1 cup water to a boil then stir in 1/2 cup oats, cinnamon, vanilla & pinch of salt. Cook about 5 mins over medium heat; stir occasionally.
  • Microwave: Combine water, salt, cinnamon, vanilla & oats in a medium microwave-safe bowl. Microwave on HIGH 2 1/2 to 3 mins, stir before serving.
  • Top with almond butter, apple slices, maple syrup, walnuts & a pinch of cinnamon.
