This healthy turkey taco salad is packed with veggies will be the highlight of taco night! A classic meal transformed into a nutritious package you can feel great about eating for nutritious lunches and dinners.
1 11-ozcan corn with red & green bell peppers(Mexican corn)
2cupsinstant brown rice
toppings of choice: shredded cheese, cilantro, green onions, sour cream, tomato, lettuce, etc.
Instructions
In a large skillet over medium heat, cook & brown ground turkey, breaking meat up into small pieces.
Stir in seasoning mix, water, salsa & corn. Bring to a boil & stir in rice. Simmer on medium for 5 mins. Cover with tight-fitting lid & turn off heat (keep pot on burner). Let stand 15-20 mins, until liquid is absorbed & rice is tender.
Prepare all your toppings – chopping lettuce, tomatoes, cilantro, onions & so on.
Fill your bowl with the desired amount of lettuce & rice then add skillet mixture into bowls, top with favorite taco toppings. Enjoy the fiesta!
