Ingredients
  

  • 1 lb. lean ground turkey
  • 1 pkg. reduced-sodium taco seasoning
  • 2 1/4 cups water
  • 1 16- oz jar salsa (thick & chunky works best)
  • 1 11- oz can corn with red & green bell peppers (Mexican corn)
  • 2 cups instant brown rice
  • toppings of choice: shredded cheese, cilantro, green onions, sour cream, tomato, lettuce, etc.

Instructions
 

  • In a large skillet over medium heat, cook & brown ground turkey, breaking meat up into small pieces.
  • Stir in seasoning mix, water, salsa & corn. Bring to a boil & stir in rice. Simmer on medium for 5 mins. Cover with tight-fitting lid & turn off heat (keep pot on burner). Let stand 15-20 mins, until liquid is absorbed & rice is tender.
  • Prepare all your toppings – chopping lettuce, tomatoes, cilantro, onions & so on.
  • Fill your bowl with the desired amount of lettuce & rice then add skillet mixture into bowls, top with favorite taco toppings. Enjoy the fiesta!
